Have the writer decided it alone or did the actors ask them to do it? In order not to have quite as many " love " scenes with each other.
Bitsie is the leading lady from day one of the show and she enjoys having a character that changes but it is the writers that are coming up with the ideas.
IMO Grimm treated non-(wesen/cops/grimms) kind of like second class citizens. Even family members who fit that bill never showed up or seem part of their lives. Often in these supernatural shows the leading lady is given powers. IMO and others they could picked different kind of wesen since we had 2 hexenbiests and a zauberbiest in the show already.

Nick in the early seasons did not prioritizes Juliette's safety given all the bad things that happen in that house to Juliette. If my husband's truck was missing from the driveway when I came home and he was home, I would yell up to my husband to ask him where the truck was. Nick could have asked Juliette why she was back so early when he first came home. Before a wedding, my husband and I review everything together to make sure we do not forget something like the gift or a wedding ring. If Nick was in the bathroom using the shower, how was Juliette able to shower and completely redo her hair?
Nick fell for this type of mistake before in "Plumed Serpent" where he thought Ariel was Juliette until he saw the tattoo.

Nick is a Grimm not just a man. All he has to believe is that Juliette might have a spell on her or potion affecting her.
1) Adalind used a potion on Hank so he would go after her in season one.
2) Adalind had sex with Hank to make the spell on Hank worse.
3) In the past, Juliette got sick from a scratch from Adalind's cat. Adalind's spell on Juliette made her go after Sean.
4) Adalind's spell had made Sean go after Juliette.
5) Wesen related illnesses and early zombie effects also can make you go after someone.
6) Adalind called the day before wanting to put a spell related spray on Juliette.
7) Adalind had only recently lost Diana and they had turned down helping her get Diana back only in 619 we are talking about 621.
8) Adalind met many of Nick's friends so she could have known about the wedding that day.
9) Juliette's car was missing outside when Nick came home but Juliette was inside and Nick did not ask what happen to it.
10) Nick fell for this type of mistake before in "Plumed Serpent" where he thought Ariel was Juliette until he saw the tattoo.
11) Nick was affect by a simple Kiss in "Kiss of the Muse" to make him go after Khloe.
Fool me once, shame on you. Fool me twice, shame on me.
Added one more reason to why Nick should have been more aware.
Women characters do not have to be having sex with the lead to be important to the story.
