Nick got his socks off when he thought he was sleeping with Juliette but was really sleeping with Adalind, and when it looked like he was sleeping with Adalind but he knew he was really sleeping with Juliette. The common factor in both cases was that in his mind he was sleeping with Juliette and at the time he was in love with Juliette. That has never been the case with Adalind.
Initially, Nick was primarily concerned about baby Kelly, and Adalind's presence was something he accepted as necessary for the welfare of the child. There's a lot of bad experience for him to get over, and it's worse for him than for her, because while he took her powers and Diana from her, she tried to inflict actual harm, if not death, on both him and Juliet, not to mention what she did to Hank. He slowly got past that to the point of having a passionate night with her before leaving for Germany, leading to some "I don't know how I feel about Adalind" moments before Rosalee laid the news on him that Adalind's hexenbiest has returned and she's hiding it from him. Which is bringing all of his past issues with Adalind back to the forefront of his thinking.
