Nick proposal. Nick was keeping a very big secrete. That he is Grimm is one but that wesen exist is another. It is her clear thinking that allowed her to realize it was more then grief from losing Mari. Would you really wanted her to accept under those conditions. Would you really want her to dump him without even taking the time to find out why Nick had changed. Remember after becoming a Grimm Nick made a big change and became very closed off. His excuse was the death of Mari. Juliette did not buy that.
You say she should have told Nick abut the Sean compulsion. Isn't that a lot to expect from someone how doesn't even know this world she has been shoved into even exist. Doesn't Juliette get any credit for being able to hold it together after having her mind whipped. Remember she doesn't even know the hexenbiest, potions, magic even exist. to her she is having a psychotic break. The way she pulled through would take a lot of strength. And still she did not leave him.
When she finally did learn about wesen she did not run. She studied the books, and tried to become part of his world. It was only after several cases that she started to have doubts if this was a life for her. It was Nick reassurance he could protect her that caused her to decide to stick with it. We she how well Nick keep his promise to protect her. Being turned into a hexenbiest is not my idea of protecting her.
This idea she was stringing Nick along, what would you want her to do. If Nick had not keep making a promise he could not keep she would not stay. Even now Nick is promising Adalind he can protect her. I am sure she is thinking, yea like you did for Juliette. If Nick could not protect Juliette from Adalind what make Adalind think he can protect her from Eve. Like Adalind said Eve is a weapon. Nick is the one stringing them both along.

She was taking all the risk, for the sole purpose of helping to keep her friends safe. AS for making the choice, she nor any of them knew the magnitude of the risk. It is one thing to have side effects. Medicine we take has side effects. But no one ever considers the side effect to change everything about who you are. Juliette embarrassed what she was. She had not choice, she is and will be a hexenbiest. What would you have preferred, she stay in denial and act is if it never happened. With people she barely knows. Being ask to take part in a ritual that make no sense to her. She does it on pure faith. Yet she is the evil character.
