This is an interesting thought. I would have liked to have seen the series go into more detail about the duties of a grimm. However, we got what we got, so within the confines of the series, Nick did look upon his physical and mental changes as a prelude to duty as a grimm. I need to add here that I don't approve of a character making things up as he goes along and everybody just accepts it, but that comes down to poor writing.
The problem with all of this that I see is Nick has a human girlfriend. While he has an understanding of this new world (and he continues to learn more each week), it would not make a lot of sense to Juliette. I know she helped the scoobies and she knew of wesen. Even so, she would have to view the changes in Nick with a certain concern, not only for him, but for herself. For one, wesen present a constant danger because of the apparently infinite types of wesen out there.
Secondly, there's the concern for herself, and I do not consider this selfish. Nick's love of the grimm life grows every time he heads out the door. A human woman who has just a snippet of the wesen world and how Nick views it cannot ignore the ramifications that such a world presents.
She could look at it as an addiction, but then she still has the same problem. How can she compete or even overcome it and regain her place as being on the pedestal of his life? The answer is she can't.
I guess this poster missed out on the season Juliette was a member of the gang and also missed out on the rest of the series being fully on board the Wesen world when she became a Hexenbiest.
