Once Juliette decided to shut Nick down, it didn't matter what he said, what he did or was willing to do, she wasn't interested. Juliette chose to distance herself from Nick, spurning him at every turn because his initial reaction wasn't instantaneous acceptance. Juliette herself refused to accept her new self for weeks and she desperately wanted a cure. She went to Sean and eventually to Henrietta wanting to find a way to undo everything. She later told Nick she was in hell because she wasn't happy with being made into a hideous monster not just reviled by Grimms but by most wesen in general.
Nick made a mistake turning away but she shouldn't have tried to force a kiss on him and hinging the rest of their relationship on that alone. I have a feeling only zauberbiests and Sean's father had a thing for hexenbiest, woged or not. Nick hated hexenbiests and had the worst experiences with one, why would she think he'd kiss that rotten face all of a sudden without first digesting that she had changed and that it could be permanent? Nick didn't want to walk away from her or what they had but she refused to give him the time of day.

She got mad because he called the baby innocent, which he was regardless of who his mother was or how he came to be conceived. As some have posted already, it seems Juliette didn't have much faith in Nick's feelings for her as far back as S1, yet Nick never intentionally stepped out on her. Nick remained faithful to her until the very end of S4. If Juliette didn't trust Nick why in the world did she stay with him as long as she did? She clearly had niggling doubts about his fidelity so why bother with someone she obviously didn't trust?
