It isn't just as easy to speculate Nick didn't say it based on what we saw. It's an educated guess rather than just a guess. Nick had a newfound appreciation for what he had because he just lost it all. He damn near condemned the entire world because of losing everyone. That would lead most to believe that Nick said those words much sooner than later. The only reason he wouldn't say it is if he feared those words were a curse and it would cause him to lose her all over again.
You keep saying Nick took it back. He said the words. We saw it. You're making it sound like Nick didn't mean it and undid it for that purpose. That's what saying he took it back implies.
Also, to address saying it in another dimension has no weight:
Objectively speaking, what weight did it actually have? It didn't appear to change the way Nick and Adalind behaved towards each other. She didn't treat it like a big deal because she acted like she already knew it. You asked before what Nick saying it before everything got fixed did for Adalind. Apparently, it didn't do anything and has no effect on her.
