How could they be meeting with HW when we know HW left Portland after Meisner's death? Nick and the scoobies never worked for HW, even though the collaborated a few times. You are changing the premise of the show to fit a new system (HW Portland division) that we saw destroyed and never revived. There's a reason the last image we see of the show is the big "G" on the cover of the book and not HW and their many agents in an underground bunker.
The Grimm legacy we saw start with Nick is continuing with his son and (highly possible) step daughter. Why would the writers go through all the trouble of paying homage to Nick's first year as a Grimm (mind you with upgrades) only to go off at a tangent and say it's actually a half zauberbiest that nobody fully trusted who's meeting up with the kids, including Monroe and Rosalee's and not just his biological daughter? Lack of trust and holding a grudge are two different things.
Nick being a cop didn't alter his mission as a Grimm, he worked the two interchangeably. All of Nick's cases in the six years since he got his sight were Grimm related, three was hardly ever one that wasn't and even when he wasn't on a case, his Grimm was always on call as seen when he went on the weekend getaway with Juliette. Nick never waited for a case in order to go after bad wesen, he always acted when they crossed his path, so the same can be applicable in that last scene. When Nick was out on the field doing his job (including being a Grimm using special weapons against certain wesen) so was Sean whose job involved being holed up behind a desk in his office almost all day everyday so he had little to no time to go chasing after wesen during the day, that was Nick's job by reason of being born to do it and also as a detective. And your statement about Nick not taking a weapon except as a last resort is false as seen with how he dealt with a majority his WotW especially in S1.
Kelly is the next generation Grimm, Nick's likely passed down the trailer to him just as Marie passed it down to Nick, there's no need to cram seven people in that tiny, confined space, nine if you include Monroe and Rosalee. Sometimes Nick went to the trailer alone, sometimes with Monroe or Hank or Trubel. It was only after the trailer burnt down that the whole group could meet in the spice shop basement without crowding one another. As for Kelly and Diana with the staff, we don't know why they need it we can only surmise it's to deal with something bigger and worse than Zerstörer.
The new trailer is Nick learning from the past and upgrading his way of doing things. It is hidden (because why fix what ain't broke) but it also has additional security features like the access code (so no T, D and H roaming the woods will stumble across things they shouldn't), the digitised database is an HW influence and it makes accessing information a lot easier and the added bonus of uploading to a cloud in case of an fire.
