I mean, having sex under the guise of someone else may not be the only way to remove your enemy's grimm. She did take Nick's Grimm because he took Diana. She didn't know Nick had helped his mother take her, but because Renard lied to Adalind, Viktor was able to deceive her into taking Nick's Grimm. Adalind believed Renard gave Diana to Viktor to save himself from retaliation. She didn't have any idea that Nick, his mother, or the others were involved until she returned to Europe believing she'd find Diana there.
Adalind even went to Nick's house wanting his mother to help her get Diana from the Royals. They continued Renard's lie, telling Adalind that Kelly left after being 'released from custody' and they didn't have a way to contact her.
Adalind took Nick's Grimm before leaving Portland and believed Renard had acted on his own when giving Diana to Viktor, so why would Adalind want revenge on Nick instead of Renard? It wasn't revenge, it was the price Viktor demanded for access to Diana. If he'd ordered her to do something to Renard or one of the others, she'd done that instead.
