Was there any indication of Adalind wanting to leave Nick in the final two seasons? Nick has become her prince. She loves him as a romantic partner and a father. She's not as shallow as she used to be because the life she lives now has provided her with a loving man and friends that came in the deal. It's not about money. The old Adalind wouldn't have bothered helping Rosalee in the Spice Shop or coming to her aid against Tony.
Nick and Adalind having more children doesn't diminish their love at all. The triplets were the only children of Monroe and Rosalee mentioned. That means that Rosalee has only been confirmed to be pregnant once. Nick and Adalind have two children because Diana is treated like one of his now. Should we question the love Monroe and Rosalee have for each other since no other kids were mentioned?
Diana calls Nick Dad because she wants to. Nobody forced her. Nick would be perfectly fine if she didn't but she made the decision for herself.
Are you asking me? If so, why?
