I don't see how Nick and Adalind could have ended up together if he and Juliette broke up after S2. The reason they are even together is due to their individual journeys eventually throwing them together. In S2, you could say they were moving further apart, their only link was Adalind's dead hexenbiest and her desperation to get it back compared to S5 where it's the above mentioned link, Diana's kidnapping (even if the writers swept that under the rug with Nick claiming he'd never take Kelly away from her), taking away Nick's powers, falling pregnant with Kelly, Juliette turning into a hexenbiest that was bent on killing her. The Royals (almost) getting Diana and killing her minder, I mean kidnapper.
In S5, Nick and Adalind are almost practically forced together by their circumstances, it's not much of a choice. At the end of S2, it would have needed to be a choice they both make or their journey would have needed to look different to repeat the S5 conditions. They were attracted to one another but not enough to get over their inbred prejudices against the other's species borne of centuries of antagonistic history, at least not without a baby (Kelly) sized push to get it all started.
The most interesting question isn't whether or not they would have hooked up sooner, the real question is whether or not they last (end of the world/whatever pending doom not with standing).
