I think what we were seeing on Grimm was the result of the 800 years of conflict between the royals and the descendants of the seven grimms as the royals pursued the keys to the hidden grimm secret. The absence of many wandering grimms or any indication of a network of grimms communicating with and coming to each others' aid during the series suggests to me that by Nick's time there were very few grimms left. Except for those who were believed to have a key or were actively working against them, the royals may not have considered grimms much of a threat anymore.
IIRC, the royals' interest in Diana had nothing to do with grimms, but was based on her having been fathered by a royal (Renard). Since Eric and his mother had previously tried to kill Renard and his mother (presumably because Renard was Freddie's son and thus a potential rival to Eric), it makes me wonder why they were interested in buying her, rather than just killing Adalind before she delivered to eliminate another possible contender for heir to Freddie's seat on the Kronenberg throne.
