Nick not accepting her as a permanent hexenbiest is because she wasn't born as one. That's why he was adamant on curing her until Henrietta told him it was forever. In S4 he'd finally accepted it was permanent. That didn't mean he had to like that fact. She told him she had hated it before losing her mind and in S6 she'd changed her mind and saw value in being a hexenbiest but not before being forcefully stripped bare of her real self as an individual with independent thought and emotions first. And the fact that she doesn't see the S4 actions as her own makes her entire speech void of any real significance if she's not really Juliette but some random individual living in Juliette's body with Juliette's memories and Juliette's emotions. Nick shows remorse for his actions while Juliette as Eve doesn't.
