Nick hasn't said a Grimm and Hexenbeist can't be together. Juliette is the one that keeps saying that. Nick wants a chance to make things work, but Juliette doesn't. As for Adalind, Nick tried to help her and Diana in season three because it was the right thing to do. He can deal with Adalind in a civil way when he needs to but that doesn't necessarily mean he likes her. Nick is working with Adalind now to help Juliette and because of the baby.
In the spice shop Nick told Rosalee I am a Grimm shes a Hexenbiest. When Juliette was in Jail and Juliette was telling Nick how she has come to accept being a hexenbiest and she likes it. Nick response was to want her to stop. Nick only want to cure her and have the old Juliette back. When it comes to Adalind Nick has no trouble looking at her. Even knowing what she is he still has that look that she is a good looking women. He still has lust in his eyes. He can't seem to even do that for Juliette. He looks at Juliette like all he sees is the hexenbiest.
But the biggest slap is when he jumps in front of Adalind. Ok Nick might not want Juliette to throw down on ADalind in the station. But you don't jump in front of another women. I don't know any women that would stand for that. That could get your car keyed or the windows broke. Look like Nick might get his trailer burnt.
