As a couple, I think we could safely say that Nick and Juliette are star-crossed lovers if ever there were any. I'm in the camp of keeping them together, but regrettably have to say that things look pretty bleak for their chances to stay together right now.
In another thread, I suggested the concept of an "UberGrimm," which is basically what happens when Nick gets pushed too far. However, this isn't like Mario touching a super star. After turning UberGrimm and wiping out the opposition, Nick becomes bed-ridden for approximately two or three weeks, the expenditure of raw power having been so taxing that he can barely even move.
Juliette could rejoin the good guys around this time to care for Nick while he's in this highly vulnerable state. She would also gain a new connection with her fiancee, now having seen a more monstrous side to Nick that isn't dissimilar from her own.
While your scenario has merit, I'm not quite on board with Nick as juggernaut. Imo, he is a true hero - he has character, conscience, and a code. He's a decent human being, and it would sadden me to see him lapse into a raging killer mode, even with provocation. Also, he would then be tasked with seeking redemption for his actions because that's what people of conscience do.
Besides, Juliette isn't showing signs of accepting her new self, she's getting angrier. She's gone from being horrified at causing harm to others to deliberately trying to kill. She's gone from being frightened at what has befallen her to feeling rage at those who unwittingly caused her affliction. I fear she's going to cut a wide swath of damage in the days ahead. I worry that the future of N and J together turns upon how much devastation she causes. For me, it's not being a hexenbiest that is the problem, it's conquering the darker urges inherent in being one in favor of sharing a relationship with a human. I continue to hold out hope that she will be able to come to terms with her new identity, but I'm a little discouraged at how things are trending at the moment.
