From what I have read on the internet, they wanted a cop show but those are a dime a dozen so the Grimm fairytales was the plot twist that ensured the show was green lit. It honestly wasn't about a Grimm killing wesen because that's what his ancestors did. It was a cop show that featured a Grimm. Nick's morality evolves with each season so by the end of the show he's more Grimm(ish) than he was a cop, at least not as honourable to the badge as when the show began.
