I was watching Nick and Adalind fans vids the other day on youtube and it is very clear from them that many fans have wanted to see Nick and Adalind together since way back in season one. There are some Nick/Adalind videos that predate their first real kiss.
Watching these it does also seem like the writers may also have been planning it for a while to.
Personally, I thought that moment when Nick told Adalind she was his first woge and she responded by saying he was her first grimm seemed very telling.
It was like, "Ah ha! We've been living inside each others heads from the very beginning"

I get the feeling it was planned from early on as well. I remember being online back then and Nick/Adalind already had a substantial following. I even saw people wanting him to dump Juliette and asking if Nick/Adalind was a possibility even considering their roles as bitter enemies. I think most thought it would never happen and the closest it would get is the bedroom scene with Juliette as Adalind. Although, I don't think it was hard to predict Adalind would be allied with Nick at some point considering the way she was dismissed by Renard after he used her. I figured Nick would see her vulnerability at some point and not think of her as a complete monster. TV is filled with stories like that even when the two people are enemies.
The first time I really gave it some thought was during "Season of the Hexenbiest" which still remains one of my favorite episodes. Adalind tells Nick that under different circumstances they could have really had some fun together. There did seem to be some genuine attraction there but it seemed impossible at the time. I remember the way Nick looked her up and down after she said it. I figure the script probably called for Nick to be disgusted but I can't ignore what it looked like to me regardless of the intent. It honestly seemed like Nick was considering it for a moment but I know that's not how it was supposed to come off so my eyes and mind were seeing two different things.
Now that I think about it, Nick and Adalind haven't really had that many scenes together prior to this season, which includes only one episode in season 2. I bet part of the reason to pair her with Nick was to get her to have some more interaction with the gang, especially Rosalee, as well.
Back to the topic, I'm quite sure Adalind's body is another reason they were paired together. They do look very appealing together on screen and I have seen plenty of people make mention of that this season, which couldn't have been lost on the writers. I even saw statements from people who were skeptical of this story arc saying Claire Coffee is making this work a lot more than it has any right to. I know there are those who will vehemently disagree but I'm just reiterating what I've read. I am in no way saying that this is universal.
