It's not that extreme. Nick thought he could be a Grimm and be with Juliette. It wasn't an either/or situation for him.
Nick told Monroe about wanting to be a Grimm instead of Juliette because he didn't want to pressure her into it. He would only go through with reversing Adalind's degrimming if it were truly her decision.
