The "right" that Adalind was referring was to was raising her children unlike how her mother raised her. Catherine was purposefully moulding Adalind to be a mini version of herself or someone who could surpass her as a hexenbiest/user/destroyer of lives for the royals or whatever relationship she deemed worthy. I think she wanted them to have a good upbringing, happy childhood, something she never had. That comment about a Kelly saying grimm was probably because she didn't want to rush Kelly getting into this world too soon, not that she didn't want him too. Considering how Grimms come into existence, Kelly may not have a choice and there's no need to rush that. Kelly is born a grimm unless the Grimm sight skips his generation.
Diana is different, there's an element of choice involved, she could choose what to do with herself and the fact that Renard has equal say in how his daughter is raised I don't think Adalind purposefully raised her to be a grimm.
