Nick is a Grimm not just a man. All he has to believe is that Juliette might have a spell on her.

7) Adalind had only recently lost Diana and they had turned down helping her get Diana back only in 619 we are talking about 621.
8) Adalind met many of Nick's friends so she could have known about the wedding that day.
9) Juliette's car was missing outside when Nick came home but Juliette was inside and Nick did not ask what happen to it.

There is just nothing so inherently bizarre about Juliette's behavior, to make him jump to such a conclusion. Even as a Grimm, he's never seen one person turn into another. Just because you've seen magic do one thing, it doesn't make you instantly capable of noticing every possible permutation. It also requires him to perceive things about Adalind and her current directives, that would be nearly impossible without more information. And seeing his girlfriend in a state of undress, ready and willing, Nick's mostly thinking from below the belt at that point.
Juliette could have been affected by a spell or potion or had her car stolen but Nick pays no attention to this. Nick could have called up to her before she ever left the bathroom. Later when Nick was getting ready for wedding that both of them were in the wedding party he really never talked to her about the wedding until they left. I am trying explain why Juliette and Nick partly blamed Nick for what happen not completely.
10) Nick fell for this type of mistake before in "Plumed Serpent" where he thought Ariel was Juliette until he saw the tattoo.
11) Nick was affect by a simple Kiss in "Kiss of the Muse" to make him go after Khloe.
Well, sure. In retrospect, it's easy for Juliette to be upset with Nick and for him to blame himself for not noticing a difference. He probably had many variations of "If only..", rolling around in his mind. But that's always easy with the benefit of hindsight. And I'm sure, deep down, Juliette knows it's not entirely fair to blame Nick. But there's an almost instinctual reaction for her. Whatever the reason, Nick was with another woman. But unless Juliette had walked in right in the middle, (and boy would that have been amusing), his chances of figuring it out, weren't great. Had Adalind been more patient and arranged this during a less conspicuous time, it could have been ages before they put two and two together. As it was, Adalind didn't spend much time playing the Juliette role, probably realizing that any serious conversation they had, would do much more to give herself away than what happens between the sheets. So she basically went right to the seduction. And since Nick, like most men on the planet, was ready at a moments notice, the only real thought on his mind was, "This is turning out to be a great day!". It wouldn't be the first time that a guy wanted to kick himself after the fact, for his inherent maleness.
