So Eve as a main character would make it different. I just have trouble imagining the world of Eve. Using Grimm as a model would not work. For the Grimm world to work you would have to lift the vial of wesen secrecy. At least let it be acknowledged wesen exist. Use the Jessica Jones world model. Super humans are known only a few have seen one.
Scorpion features a group of geniuses who work for the government. They have a handler who works with them as well as a normal woman, who's working with them to give them an understanding of what it's like to be normal. I didn't care for the series at first, I didn't like Walter, the head of Scorpion. I saw him as very arrogant. But the series has expanded with its second season, and I've grown to like all of the characters a lot, including Walter.
A drawback I have seen with Grimm is the lack of human interaction in the series. I don't mean Hank and Wu, they're cops. Grimm has made this big deal about the end of humanity. Well, watching the series, I would have thought it had come to pass. Wesen only interact with wesen, or if they interact with humans at all, the human generally ends up dead. Certainly there are wesen-human marriages, and wesen-human friendships, but apparently the creative team isn't capable enough to give us a story about those relationships. I'd settle for seeing an episode about a wesen family, like Bud's.
Just as a twist regarding this thread, I found it ironic that Nick got his socks completely rocked off when he thought he slept with Juliette, only it was Adalind. Now that he's sleeping with Adalind as Adalind, she has to initiate sex if she wants it. Not even padding around in nothing but a towel is enough to get Nick's interest these days.
