Adalind could have been charged with identity theft, and if a monetary value could be assigned to Nick's grimm powers, with fraud or theft. None of these would be anywhere near as satisfying has just cutting off her head, though.
I think it could be a lot more serious than that.
Adalind's spell, the Verfluchte Zwillingsschwester, was termed as a "really badass" spell by Monroe. Rosalee said she couldn't find anything in her books on it, and reversing it was beyond her capabilities. While it seemed the spell did no more harm to Nick than making him normal like everyone else, Elizabeth disagreed and stated doing nothing could be worse for Nick. I take that to mean, that Adalind's spell would eventually have killed him.
Seems Adalind's got a masochistic streak in her. It's not enough to just debilitate someone, she's going to make sure they die in the process as well. She did that with Juliette and apparently tried the same thing on Nick.
Oregon's Class 1 assault involves the use of a deadly weapon. Adalind used the spell to cause serious physical injury to Nick. First degree assault is a felony charge. I'm not so sure Adalind couldn't be charged with sexual assault since more went on than just having sex with Nick while disguised as Juliette.
The best way to frustrate a cyberbully is to ignore him.
