I agree that those moments were meant to probe at the possibility, but I still think it would be dumb/ridiculous. Keeping the peace and/or being friends for their child's sake is one thing, but a romance? It just does not compute given the history. Everything about it feels forced. The moments of endearment Adelind's shown feel manipulative to me, like she knows Nick is sick of her being in his life, so she's working hard to win him over. The moments of concern feel slightly more legit because she now knows that he's a standup kind of guy, but also she legit needs him around to help raise the kid and fight off the many people/groups that might try to kill them, esp now that she can't call up her hexenbeist self.
But honestly, take out the hexenbeist complication for a minute and imagine Adelind was just a human. If she (or if she was a he, depending on your orientation) had blindfolded you and pretended to be the person your in love with to trick you into sex and make you lose something you held dear and the result was a baby, do you think you'd be inclined to build a romance with that person?
