IMO Juliette had sex with Sean as reward to telling her where Adalind was staying and telling her it was a good idea to kill Adalind. Sean gives bad advice and wanted Adalind dead because he did not want Diana back at that time or for Adalind to have her.
Scene: Renard arrives home and goes to his room, sore after his fight with Kenneth.
[Renard grunts and sighs as he walks]
Juliette: Where's Adalind?
Renard: How'd you get in here?
Juliette: You gave me a key, remember?
Renard: I want it back.
Juliette: What happened to you? [She tosses the key to Renard]
Renard: I met the new Prince in town.
Juliette: Is Adalind with him?
Renard: Why?
Juliette: I'm gonna kill her.
Renard: Good idea. She's at the Deluxe Hotel. Careful, though. Kenneth is not Viktor.
Juliette: Apparently. [She starts unbuttoning her shirt]
Renard: What are you doing?
Juliette: Finishing what we started. [She takes her shirt off. She then touches Renard's lip] Does that hurt?
Renard: [He grabs Juliette's wrist] Yeah.
Juliette: So will this.
Renard: Good. [He and Juliette start kissing]

When Juliette first moved out she was trying to understand being a hexenbiest and was still looking for a cure imo Nick and Juliette had not broken up yet. Once Juliette decides she wants to be a hexenbiest but maybe not be with Nick when she is in prison talking to Rosalee and Nick IMO Nick and Juliette were completely broken up as a couple then and never came back together. Team Grimm and Nick are trying to cure her against her will so it becomes very dangerous for everyone.

The scene you just described about Juliette being in jail and that’s when she decided to be done with Nick happened after she got thrown out of Sean’s place fornicated with Sean and went on bar hopping which got her arrested. So, by your own words, she did cheat on Nick. BUSTEDt
Juliette told Nick in a immature way that it was over in Heartbreaker. IMO Nick leaves too many messages for Juliette so it backfires. You cannot give someone "treatment" against their will too.

At home, Nick calls and leaves another message for Juliette as he gets more frustrated that she won't answer. He then gets a new email from Trubel updating him on her and Josh's situation and asking if everything is okay. Nick writes back that everything is fine as Juliette arrives home. She tells him she needs to get some of her stuff and that she was hoping he wouldn't be home. Nick asks if they can talk about this, but she tells him there isn't much that he or anyone else can say or do. Nick tells her he hasn't given up yet, and she asks why not. He says it's because he loves her, and after a few seconds, she starts laughing in his face. Nick's phone rings, and Juliette says, "Answer it. Come on, Nick. There's a lot of big, scary Wesen on the loose in Portland. That's what you're good at. Go get 'em, Grimm." Juliette then goes upstairs and Nick answers his phone, and Hank tells him about Rick.
Women characters do not have to be having sex with the lead to be important to the story.
