It's true, Adalind hasn't changed (all that much). She reacts immediately against an attack and Nick is aware of this. He was willing to sic her on Renard if anything happened to him in 6x01. As a Grimm he's shown that he's reticent to trust the hexenbiest but is working towards trusting her as a mother and lover, which is spilling over the hexenbiest side. It's not instantaneous and it shouldn't be. I think certain expectations viewers have for the relationship will be hard to meet with Nick and Adalind because of their history but it hasn't kept them from actually making the best of their situation with caution. If it no longer is sustainable from either side to be together, I'm sure they wouldn't hesitate ending their relationship and settling for platonic co-parenting much like Adalind and Renard.
