Yes the loft was more about keeping safe from immediate danger after his mother's death but I hope they move out once everything settles and Kelly gets older. I wouldn't mind so much if it had more space.

When he took her hexenbiest there was a lot of chemistry there. But once she stepped over the threshold of his house, the chemistry between them evaporated. She was relegated to domestic houseguest while Nick remained in the forefront as "the grimm".

The only difference I see in your post is that Nick didn't tell Adalind he loved her as much as he told Juliette and Nick never proposed to Adalind.

Nick stayed out later living with Adalind and the 2 kids then he did with Juliette. Nick did help take care of baby Kelly. Nick and Adalind lived in the loft.

I'm not sure what any of these have on the bearing of the Nick/Juliette relationship versus the Nick/Adalind relationship. For instance you listed 'Juliette loved to cook'. True, she did. I'm just not sure what bearing that has on either relationship. You also listed that Nick and Adalind lived in the loft. True. But I'm still not sure what bearing that has on their relationship.
