Nick turned into a Grimm like the first minute of the pilot. IMO over the series Nick began more serious, withdrawn and not funny so he did change.
I don't think so. In my opinion, G&K were afraid to turn nice guy Nick into someone not so nice and not so admirable.
In season one, Nick used to tell jokes and the like and while series went on he was more serious. In season 6, at the hotel he saw a wesen in the tunnel who was stealing but not killing Nick broke his neck when he woged without a thought or telling him he was a cop. When Monroe told him he made a mistake there was no concern on his face.
Women characters do not have to be having sex with the lead to be important to the story.
