If a television series portrays a person as emotionless for a season and then next season shows them as emotional, I believe it's stating that emotions are a sign of growth. However, for all her emotions, Eve had no reaction to the apology.
I don't think that turning back into Juliette would be a whole new level of growth for Eve. In some ways, it would be a huge step backward, especially if it's designed to get her interested in Nick again.
