Interesting question. Maybe down the road they will have an episode about Nick's passed? Could be possible that his aunt had him move to Portland on purpose?
Yes, I saw it again, and you are right that he didn't mention cousins. But just because he didn't mention them, doesn't mean they aren't there.
I do think that it would be nice if a couple of seasons down the line a young cousin moves to Portland for college and his Grimm abilities emerge; Nick will have a chance to be the mentor this time and introduce him/her to their heritage. This might be something the writers might do if the actor playing one of the regular/semiregular characters has to leave.
I would love to see a young Grimm come on to the scene so that nick could mentor him or her... It would not need to be a cousin but that would be interesting too

Wouldn't it have to be a cousin to some degree, if not a first cousin?
(We don't know if the uncle mentioned was Nick's mother's brother; he could have been a great-uncle.)
There are enough regular or semi-regular characters as there is, but if one of the actors decides to move on. . . .
The writer's would have to be careful not to make the new character a "Cousin Oliver."

There are Grimm not directly related to Nick... A young Grimm not related to him could certainly pop up.
