Well.....duh. But here's something you keep missing. When Nick was talking to Monroe, he was talking about how appealing life would be (without being a grimm). I put that in parenthesis so you wouldn't miss it. Nick talked about moving away with Juliette. In case you miss it again, that means leaving Portland, his job, his house, and his friends.
Funny thing, Monroe didn't squawk when Nick brought it up to him. I'm sure Nick talked to Hank about it, but we never see Hank all upset and blubbering because his partner wanted a different life. Even Nick himself doesn't voice any regrets about breaking up the scoobies for a potential new life Juliette.

Except that never came up in the script. But, and I'm sure it never occurred to you that perhaps Nick didn't sleep with Juliette because he was afraid *he* would murder her.
