The people most likely to have passed the word around that there was a grimm in Portland would have been the wesen Nick arrested and didn't kill and the wesen who Nick helped. They'd tell their friends, who would tell their friends, etc., etc. By the sixth season, some non-criminal wesen recognized Nick as a grimm and were comfortable enough that he wasn't going to take off their heads that their response was, "oh, you're the grimm."
As near as we can tell, Bud probably left town to join his wife and kids after it was pointed out to him that his wife probably wouldn't approve of him spending the rest of his life hiding out in the tunnels under the fome. Maybe he decided that Portland had become too dangerous a place to raise his family?
