Why would the Pilot-version of Adalind, who didn’t know who or what Nick was, be concerned about not woging in front of him? Normal people couldn’t even see a half Woge – only Grimms could. The villainess Adalind woged in front of Nick many times...

No. A Wesen couldn't see a Grimm before they woged. When they woged, Nick’s eyes turned black or into "infinite darkness". Monroe and Roselee explained this to Nick. Besides, why do you think Wesen who heard Nick was a Grimm immediately Woged to see if it was true?
