In ancient times, most people could not read. Those grimms who could read and write would probably be spending their time hunting down wesen with the rest of them. Is it possible the grimms may have hired someone to write the diaries for them, since so few people could read and write in ancient times?
And even at that, how valuable would such a book be to a grimm in ancient times? Perhaps that's the reason why Nick ended up with different sets of books.
