Why and how would Nick give up being a Grimm? Adalind never expressed any wish that Nick should not be a Grimm in season 5 and 6. (She took his powers when they were enemies and she thought it was necessary to get Diana back). On the contrary. When she started trusting him, Nick being a Grimm was what made her feel safe. Adalind was a "natural-born" Hexenbiest. She had no problem with Nick being connected to the Wesen-world.
What would Adalind have to do with it? You stated Nick was ready to give up the world for Adalind. Being a grimm is part of his world.
