Really? Why didn't he give up being a grimm for her then?
Yes, that was the storyline. Z wanted Nick to give up the stick (i.e. give up the world) to get Adalind and his friends back to life. Nick almost gave in, until his mom and aunt showed up. When Z was killed and Nick brought back, we saw an ecstatic and very emotional Nick. He kissed her, held her, checked if the ring was gone and referred to Adalind and Kelly as “my family”.
Why and how would Nick give up being a Grimm? Adalind never expressed any wish that Nick should not be a Grimm in season 5 and 6. (She took his powers when they were enemies and she thought it was necessary to get Diana back). On the contrary. When she started trusting him, Nick being a Grimm was what made her feel safe. Adalind was a "natural-born" Hexenbiest. She had no problem with Nick being connected to the Wesen-world.
