Chemistry, like love, is something that can't clearly be defined. It's not a thought, it's a feeling. I never asked anyone why they love someone because I know I won't get an answer that makes perfect sense. I think I'd be more likely to get a list of attributes than a criteria for love.
On this note, I remember watching Spider-Man, The Animated Series, over twenty years ago. Felicia Hardy was engaged to a bad guy and asked if he had ever really loved her once when she found out his criminal identity. He responded by saying he loved things like her beauty, wealth and class. She then replied by saying those are things he may love about her but it's not the same as being in love with her. After all these years, I think this children's series got it right more than a lot of adult shows I watch now.
Back to chemistry, I'm not sure people are just defining it with how a couple is written. I think it has just as much to do with a feeling they get when they see Nick/Adalind vs. Nick/Juliette on screen together. One feels right while the other doesn't. A couple could say all the right things to each other and still feel lacking in chemistry while two people who wouldn't be a good match on paper can light up a screen.
