I think that was just a momentary flash of panic, although he could have definitely handled the situation better by sitting down and giving himself a chance to think before bolting out the door like an idiot. Nick and Juliette stopped being in love because the writers wanted it that way, never mind three and a half seasons of character development.
Like i said in a few postings on various subjects pertaining to this show. Most of us, if placed in similar situations, would not have reacted as some of these characters did. In addition, most of us would not have gotten away with what some of these characters got away with. To me, it includes, evil Wesen, good Wesen, Grimms, cops and people in general.
I think most of us will agree, when it comes to the show Grimm, excluding the fantasy parts, art did not imitate life.
