I don't really think there's anything Nick could've done to save the relationship because I think Juliette had already made up her mind that they were doomed. She stopped seeing them as Nick and Juliette and just as a Grimm and a Hexenbiest. It's like someone of a certain race or religion deciding they can't be with someone of a particular race or religion regardless of how they feel about each other.
There's a lot of talk about what Juliette being a Hexenbiest did to her but it changed how she saw Nick. In her eyes, he stopped being Nick and was just the Grimm.
I believe looking at your loved one with something akin to repulsion and then saying you need to take a walk to think things over is a real good start at a break up. He didn't come back more thoughtful and try to reason things out. Admitting even he didn't know what to do would have been a start. But he did nothing other than sleep alone. If I recall correctly, I don't see where he had a lot to do with her after that.
What else was Juliette to do but look at the relationship as doomed?
