Nick going for a walk after seeing Juliette woge may not have been the wisest thing to do but that in no way signals a lack of commitment. Nick never showed any signs of breaking up with her and Juliette overreacted to it.
I don't really think there's anything Nick could've done to save the relationship because I think Juliette had already made up her mind that they were doomed. She stopped seeing them as Nick and Juliette and just as a Grimm and a Hexenbiest. It's like someone of a certain race or religion deciding they can't be with someone of a particular race or religion regardless of how they feel about each other.
