Nick had long since moved on from his old life with Juliette and that particular closure was reached in the episode where Eve told Nick [she knew] he loved Adalind but certain other things had remained unsaid between them, particularly the horror that befell Juliette because he was a Grimm. You are 100% about the recent scene not hitting the mark perfectly but that's par for the course on this show.
They didn't so much miss the mark, as miss the archery target altogether and kill an innocent squirrel with the arrow.
Getting shot and beaten up inside a cell for a couple of weeks doesn't make you a completely different person, no matter how hard the writers tried to convince us otherwise. Two words: "I'm sorry." Not "I'm sorry for what Juliette did." But G&K refused to do that, and as a result, the scene only slashed open old wounds instead of providing real closure.
