I can't begrudge those who want to believe Nick is only with Adalind because Juliette doesn't want him even though that's not how this season's played out. A shipper heart sees only what a shipper heart wants to see. Nick has shown more interest in Adalind in this season even with little screen time compared to S5. Eve knew he was already in love with Adalind even if he never said it. The most I can say he's felt for Eve formally known as Juliette, is overwhelming guilt, he feels responsible for "ruining" her life and to some that's a sign he's still in love with her and wants to be with her.
The Nick I see would never leave Adalind and Kelly for anything, that was the point of that "closure" scene last week. He's not the same naïve Nick that we met years ago who wanted to hold on to something that went against his newly revealed nature, that cost Juliette too much as far as he was concerned. Nick is now a fully persuaded Grimm with a family that compliments this new outlook so he's not pulled in two different directions like he was with Juliette. He's finally content with his life, himself and I think that contributed a lot of the guilt he feels/felt towards Eve/Juliette, in contrast to his first meeting with Eve, whom he believed to be Juliette at the time.
