Mainly to have Juliette face the reckoning she's been trying to escape ever since she fled into her Eve persona.
Your thread cuts to heart of the moral issue of death and killing. In almost every episode of Grimm someone dies. The death of Nick's mother, Kelly raises some significant issues. Adalind's mother, Catherine was also killed.
Kelly was murdered and decapitated by Kenneth and Verrat thugs. IMO, this was all completed by the command of King Frederich. The King made it clear that the "job" included kidnapping Diana and murder of the Grimm (s?). Hexenette played a pivotal role to betray Kelly to her death. The writers had the King, Kenneth and all the Verrat die, and when Hexenette showed up to finish the job (Kill Nick) we were lead to believe that Trubel killed her. The writers confirmed Juliette died and have never recanted.
Catherine's death was accidental when she attacked Kelly:

Adalind even talked with Kelly at the precinct, but there was not much grief shown. Later, Adalind even has her Mother exhumed to use her corpse to concoct a potion.
After HW transforms Hexenette into FrankenEve she meets Nick:

Why would Nick and the Scoobies include FrankenEve in any part of their lives let alone a birthday party for Monroe who she also nearly killed? Did they all forget what she had done?
Why is Diana the only character that still wants to know what happened to Kelly, her other Mommy.
