Where are there even hints of a con in the works? The only reason some people believe that is because she's a Hexenbiest. Why isn't Juliette running a con? She's still a Hexenbiest as well.
I think the reason we follow these specific characters is because they're not typical of their species. Nick hasn't been portrayed as the typical Grimm. Monroe isn't the typical Blutbad nor is Rosalee the typical Fuchsbau from the way they were described early in the series. Adalind and Juliette haven't really been typical of Hexenbiests as of late. Bud has shown some heroic qualities foreign to Eisbibers who were known as cowards. This group wouldn't be common throughout the Wesen world. Aside from Adalind, they were all considered decent people when the show started despite Monroe and Rosalee's shady past. They've all rubbed off on each since then and it's made them even more abnormal.
I think defining these characters by their species is a mistake, especially Adalind. She is clearly not the same character she once was but she's talked about as if she is. I liked naughty Adalind myself but I can't ignore what the show has portrayed her character to be for the last two seasons.
