The primary reason for Adalind taking the path she did was because she lost her powers. She told Nick he had taken everything from her and she was like everybody else. She may have come off as human in that scene, but it was clearly a state she wanted to rid herself of. Otherwise she would have left and gone somewhere to live out her human days. Instead she headed for Austria to steal another hexenbiest.
