The entry for Hexenbiests in the Grimm diary describes Hexenbiests as vain, greedy, manipulative and volatile, attracted to men of power and serve those with whom they form attachments with great loyalty.
Adalind was originally attached to Sean, and when she was readily killed (or at least tried to) and cast spells on people for him with little or no question. Once Sean cast her aside after she lost her powers, she was a free agent and was in "looking out for #1" mode. There wasn't a single moment during that period when you believed she actually felt anything for Eric, Viktor or even Sean.
Adalind's current relationship with Nick is the first one since Sean in S01 in which she has invested herself emotionally, and whether it's "really love" or she just thinks it is, odds her that she will continue to do pretty much anything she can for Nick - short of sacrificing her children - as long as Nick doesn't throw her to the wolves the way Sean did.
