The problem is this was never really revisited. I don't have a problem with Nick being a Grimm and a cop but I think it would only be logical if Nick took some time to decide if he should stay on the force. Being on the force does give him info he normally wouldn't have, reminds me of Dexter, but so did HW. It seemed like he took more of a liking to the way HW handled business mainly because they knew what was really going on and were willing to do what they felt was necessary. There's a certain lack of awareness that bothers me more than Nick being a cop.
I have an issue with Nick as a cop and a Grimm. I think it was New Guy who found something somewhere that described Nick as a hero. I can't see how that works because as a Grimm, he's violates the law he's sworn to uphold, repeatedly. In that scenario, he's no better than the wesen he pursues, and in fact, he's worse. So he cannot be a hero and in fact, I have to question exactly what he is. I know he isn't true to law enforcement and it's obvious he's not true to Grimmhood either.
I do agree, seeing Nick extremely troubled over his actions as a cop would put a completely different and very interesting spin on the series. Unfortunately, I don't think we're ever going to see that.
Here are four web pages that refer to Nick as the "hero" of Grimm:
