In my opinion, the time it takes to read the last sentence in the quoted recap above is about how long Nick's guilt troubled him.
The next episode recap starts out like this:
Nick felt guilty, but not too guilty. While the recap states the guilt was already beginning to eat away at him, it must have ended with the episode. Beginning with episode 303 there was no more guilt.
It's obvious that whatever guilt Nick felt never led him to experience the more complex emotions of regret or remorse.
You know, Nick's lack of remorse and regret could be due to genetics. The Grimms may have had to sacrifice the more complex emotions of remorse and regret long ago so they could be Grimms. They couldn't go around hunting and killing wesen and then have to deal with remorse and regret over every single kill. Genetics also could be the reason why Nick doesn't feel "too guilty" over his kills.
