The way I’ve worked this out for myself is that Adalind is not in love with Nick, she is in love with the idea of what she believes she has with Nick - a safe, calm, home/life that enables her to keep her child. It could have happened with anyone, Meisner in S3, Nick in S5, whoever.
And just going to throw this out there. For now Adalind might be content with mediocre sex because she views it as lovemaking, an intimate connection, something she hasn't experienced before, but at some point Adalind is going to miss the hot, sweaty explosion she’s not getting.
