I could totally see the grimms being imbued with some power that has a physical/biochemical component like radium or bioluminescence .
That would make them a lot like the Jedi. When I was a kid and saw the Star Wars movies I always assumed being a Jedi was about spirituality or magic, then I grow up and learn in a prequel that it's all about Midi-chlorians, which are basically like parasites living in the blood of select individuals, which apparently makes said individuals very cool.
If Grimm's creators are big sci-fi fans, they could easily tie being a grimm back to some genetic trait, like the ability to produce a special hormone that makes someone a grimm.
I assume at this point it has to be a gene since some descendants (ex:Josh) of the seven original knights didn't get the gift/trait.
I think the interesting thing to know would be the basis for grimm power because that would reveal A) how it's passed on B) if it can be transmitted to a non-grimm C) if it can manifest in someone who is not related to one of the knights
Bottom line, if Grimms can only be born and not all children of grimms end up being grimms themselves, all the remaining grimms better get busy having lot of kids. They can't all just die alone with no relative like that Noboja guy or have just one kid like Josh's dad because that's just bad for humanity.
