I think those two jewel-covered skeletons may have be the Grimm Knights treasure that was also taken from Constantinople and may contain something important, and the Knights caved in the catacomb entrance to keep it hidden. Don't think Monroe ran into them casually; there was probably a reason we viewers saw it. The priest and crew probably have it now. But if they don't know what is, maybe there is still some connection to the overarching story of Grimm.
