Actually what Adalind says is this:

I took that to mean that the hexenbiest is in control of its host, and as the result of that, thoughts and feelings are affected. As they well would be. Look at Nick, Renard, and Wu. The various entities/poisons that possessed them caused them to think and feel differently. The only difference with a hexenbiest is apparently the host is aware of whats going on, but can't control the hexenbiest spirit, at least what I gathered, according to Adalind.
And perhaps that's why Eve came into being. Eve is actually the hexenbiest while "Juliette" is relegated to the windmills of the mind and has no power.
